Ultra-Processed People: Why We Can’t Stop Eating Food That Isn’t Food is a 2023 book by Chris van Tulleken. Financial Times calls this a ‘fearless investigation into how we have become hooked’. Readers and publications liked this book as it became a New York Times bestseller, was longlisted for the Baillie Gifford Prize, and was shortlisted for the Waterstones Book of the Year.

They say you are what you eat, but in these times, that could be more true than ever. Human beings have also come into an entirely new age of eating that sets it apart from what has come before. For the first time in all of humanity’s history, the majority of the calories that we eat come from a new set of substances that is referred to as Ultra-Processed Food.

There might be a longer scientific definition behind what can be called Ultra-Processed Food, but it all comes down to the fact that it is usually wrapped in plastic and contains at least one or more ingredients that you wouldn’t be able to naturally find in your kitchen.

Worse than these foods being bad for you is the fact that the products are engineered so that they behave as addictive substances, something that drives people to consume more of them. That is intentional—when you pick up a triangular Dorito in your hands and eat it, maybe even licking your fingers to get the seasonings and then going back for more, that isn’t accidental. All of that happening is by design, cooked up in a room somewhere by specially-hired food scientists to make the food as delicious as possible– and so that you eat more of it.

Just because they are technically ‘food’, it doesn’t mean that these substances are good for you. Now they have been linked to being a leading cause of early death all around the world in addition to being a huge cause of environmental destruction. Despite this, in modern times the majority of what we use as staple foods are ultra-processed. It has become our food culture and is the only source of affordable food available for many people, especially those who reside in what are called ‘food deserts’.

Inside this book, van Tulleken goes into the latest evidence in order to showcase how scientists, governments and doctors have let transnational food companies come up with a pandemic of disease related to diet. The solutions have to be more than simply personal responsibility, willpower, and exercise. Entire diets must be overhauled.

There won’t be any diet plans included in this book, but readers can go along with Chris as he takes on a self-experiment that made headlines globally at the time. While being supervised by colleagues at University College London, he ate a diet of 80% Ultra-Processed Foods for a month. His body became the topic of scientific scrutiny as he spoke to experts from academia, agriculture, and the food industry.

More than just showing himself the importance of food, going on this type of diet effectively ended his own addiction to ultra-processed foods. This is an incredible book that goes deeper into the world of UPF and the impact that it has not only on people’s physical bodies but the planet too.

Check out Ultra-Processed People to see what ‘Dr. Chris’ has to say and maybe even be inspired to make your diet a little healthier and reduce your own dependence on overly processed foods!
